The Easiest Side Dish Ever

The pot roast is ready, you’ve finally decided what vegetable the kids can agree on (and will actually eat,) and then it hits you–what other side dish are you going to put on the table?
Kat Goldsmith, Girls Who Network team leader and seminar facilitator in Austin, Texas has an amazing recipe that is ready to save any dinner; not only that, but you will be getting rave reviews for weeks after!
There are no measurements to these fabulous sweet potatoes, but there is a great secret ingredient!
Firstly, microwave a bunch of potatoes until soft. Skin and bring the potatoes to a nice, lumpy and smooshed texture. Add a ton of butter and brown sugar, as well as a huge chunk of ginger. Peel and mince it as finely as possible, (a hand chopper works well, a good processor does not.) Afterwards, add a little more of everything and then you will have the most amazing, buttery, sugary, gingery sweet potatoes that will make people thinking you spent all day on them!

Heather, Kat must be an amazing cook! I have always been a sweet potato fan, but I have never paired it with ginger! I can’t wait to try it this weekend!
